Nutritional Study of Cow Milk of Various Breeds From Lahore Cantt /Bisma Sher

Summary: Milk is complete balance diet. It contains water, protein, fats, vitamins, minerals and carbohydrates. The aim of the research was the nutritional study of cow milk of various breeds from Lahore Cantt. For this purpose, parameter such as moisture, ash, protein, fat, solids-not-fat, total solids, specific gravity and calcium were analyzed in milk of Red Sindhi, Holstein Frisian, Cholistani and Sahiwal breeds. Calcium was determined by two methods. 550ppm, 630ppm, 630ppm and 560ppm calcium were found in the milk sample of Cholistani cow, Sahiwal cow, Holstein Frisian cow and Red Sindhi cow respectively by potassium permanganate titration. Both two breeds of cow milk namely Holstein Frisian and Sahiwal cow milk showed 600ppm and 590ppm of calcium by atomic absorption spectrophotometry. Cholistani cow showed 3.126% protein, 3.5% fat, 88.2% moisture, 8.3% solids-not fat, 11.8% total solids, 0.791% ash content in its milk sample with the lactometer reading and specific gravity of 30.5o and 1.0305 respectively. Sahiwal cow showed 3.3176% of protein, 4.1% fat, 87.5% moisture, 30.1o lactometer reading, 1.03 specific gravity 8.4% solids-not-fat, 12.5% total solids and 0.79% ash in its milk sample. 3.33% protein, 3,8% fat, 87.35% moisture, 31o lactometer reading, 1.03 specific gravity, 8.85% solids-not-fat, 12.65% total solids and 0.77% ash was found in milk sample of Holstein Frisian breed. In milk sample of Red Sindhi breed 3.38% protein, 3.95% fat, 85.65% moisture, 28o Lactometer reading, 1.028 specific gravity, 10.4% solids-not-fat, 14.35% total solids and 0.705% ash was found.
