Evaluation of Nutritional Parameters in Buffalo Milk of Various Breeds from Lahore /Anam Khaliq

Milk is nearly complete food. It is the only diet of young mammal during the first period of life. Milk has high nutrimental value and contains all the essential components that deliver both energy and building materials required for development and growth. Milk also possesses antibodies which shield the young mammal against infection. Milk plays great role in building a healthy society. Buffalo milk is characterized by high calcium content Calcium is very important to human being. It is needed for tissue and bone development and adequate calcium intake is important for maintenance of bone health and may reduce risk of osteoporosis keeping in view the importance of buffalo milk this study was performed. Parameters such as Calcium, Protein, fat, moisture, solid not fat, total solids and ash were analyzed in buffalo milk of four breeds. Nili, Ravi, Nili Ravi and Kundi breed were used in this study. Milk samples were collected from Lahore, Punjab, Pakistan. Nutritional evaluation of milk of four different buffalo breeds was carried out in which Ca% was analyzed by Permanganate titration method and Atomic Absorption spectrophotometer (AAS). In permanganate titration method 10g milk sample of each breed was ashed at 550oC.and dissolved for estimation of calcium in milk sample with dilute HCl. These samples were titrated against Potassium Permanganate and amount of calcium was found in four breeds of buffalo. Ravi breed has highest calcium i.e., 660ppm than other three breeds i.e. Nili, Kundi and Nili Ravi 500ppm,360ppm and 330ppm respectively as calculated from permanganate titration method. While atomic absorption spectrometry gave 650ppm and 740ppm calcium for Nili and Ravi breed respectively. Results showed that Nili breed has highest specific gravity1.034 than other three 69 breeds i.e. Ravi, Kundi and Nili Ravi 1.0326, 1.0328 and 1.031 respectively. The study showed that milk of Nili Ravi has good amount of protein 4.64% and highest among four species however milk of, Ravi 4.44%, Kundi 4.29% and Nili 3.83% showed lowest protein as compared to other species as calculated from Kjeldahl method. The moisture percentage found in the study showed significant differences among the milk of Nili 86.54% and Kundi breed 83.34% in contrast with milk of Ravi and Nili Ravi breed 84.37% and 84.33% respectively. Results of ash percentage of four specie do not show significant differences except Ravi breed milk (0.7649%, 0.832%, 0.768% and 0.7799% in Nili, Ravi, Kundi and Nili Ravi respectively). The study showed that milk of Nili Ravi has good amount of fat 6.33% and highest among four species however milk of, Ravi 5.05%, Kundi 5.85% and Nili 5.1% showed lowest fat as compared to other species as calculated from Gerber method. Kundi breed has highest 16.66% total solids value while Nili breed showed 13.46% lowest. The SNF found in the study showed significant differences among the milk of Nili 8.35% and Nili Ravi breed 9.34% in contrast with milk of Ravi and Kundi breed 10.58% and 10.81% respectively.
